The grapes for this signature label wine were grown on the Ellis family vineyard which is situated on the ancient Cambrian soil of the Colbinabbin range within the Heathcote wine growing region. This full bodied cabernet was matured in French oak barrels for 14 months.

A classic blend of shiraz 60%, cabernet 25% and merlot 15%.

The grapes for this wine were sourced from two vineyards in the Heathcote region near Colbinabbin.

These vineyards grow on the famous red Cambrian soil. The wine exhibits all the characteristics of the outstanding 2010 vintage. It is a fruit driven style, with a distinct soft tannin finish.

The Greenstone Shiraz combines the elegance of mid-Victorian Shiraz with the depth and weight that characterise wines from Heathcote. The elegance derives from excellent vineyard management which helps retain delicate perfume in the grapes, whilst picking when the grapes are fully ripe, gives power and balance. The low levels of oak used for ageing allow the Shiraz to shine through in the glass.

Deep crimson-red; the bouquet is rich and deep, with blackberry, spice and dark chocolate intermingling, the hint of vanilla picked up on the palate courtesy of 18 months in new American oak; that oak doesn't overwhelm the fruit on the medium-bodied palate, which has good length and balance, the tannins particularly fine.

The McIvor Shiraz has silky, ripe, brambly fruits, supported by firm, fine tannins with hints of French oak. It shows an elegant minerality and tight acidity and lovely texture. Overall, it is fleshy, generous and well balanced. Whilst just a baby at the moment with the appropriate amount of cellaring for it to further integrate and soften, it will be a really delicious drink in three to five years time.

A blend of a younger vine Shiraz with Mourvedre, and a tiny amount of the white Riesling. The cepage (blend percentages) varies slightly from year to year, but is about 90% Shiraz, less than 10% Mourvedre, and 2 or 3% Riesling.

The fruit for this wine is grown at two vineyards at opposite ends of the Heathcote region; Merindoc Vineyard at Tooborac in the south and the Willoughby Bridge Vineyard at Colibinabbin the north. Merindoc vineyard, with gravelly, low fertility ironstone soils provides minerality, structure and a cooler climate. Willoughby Bridge Vineyard is planted on the revered Cambrian rich red dirt, one of the oldest soil types in Australia and renowned for the production of intensely flavoured Shiraz. Another warm and dry vintage gave low yields of concentrated flavours.

Matured on old French oak for 6 months to allow integration this wine has been bottled young to allow for the traditional bottle maturation of this style of wine. A crust or deposit may develop with time so decanting is recommended. Enjoy with aged cheeses or the Christmas fruit cake.
