The wine is tightly packed full of black fruit, spice, cloves, and plum. The oak characters are beautifully integrated into the wine, giving the wine structure and adding power, balance and a savoury richness.

Whilst enjoyable now, this wine will reward careful cellaring for up to 6 years.

Four vintages in and really finding the groove stylistically, very similar treatment in the winery as in the past few vintages with a mixture of parcels some being farmed off to old oak others being left in tank and a lot of lees work for texture. Natural ferments on the Rosé are commonly seeing super long fermentation periods of around 115 days and the wine has struck a chord of balance between textured mid palate yet supported by linear acidity. All in all producing the ‘house style’ we set out to make of a wine that is subtle in colour, highly fragrant and textural yet still dry and refreshing.

Produced in the French beaujolais style, with a focus on fragrance, freshness and drinkability. This is a light juicy, easy to drink wine. No noticeable oak, ripe tannins, sound fresh berry, dried herb and a touch of spice. It has nice length and finish, and is ready to drink right now.

Although both this and Syrah No 2 come from the same, 3.3 hectare vineyard (dubbed the "Clos Graillot"), the Graillot Syrah tends to come from the top of the block while the Syrah No 2 typically comes from the fruit further down the slope. Ultimately however, both of these wines result from a barrel selection and for the Graillot we are aiming to produce the most pure, perfumed, elegant yet intense wine possible; a wine of great finesse and yet with excellent aging potential.

Harcourt Valley Riesling is made in an off dry style displaying lifted floral aromas, followed by a slightly sweet palate (but not over powering) with hints of citrus (lime) with plenty of acidity to dry out the finish. This is a great wine to enjoy on its own or with seafood.

This Marsanne Viognier Roussanne is a classic French Rhone-style blend. Rich and generous, full of flavour, warm and persistent. The subtle oak treatment is well integrated. A clean, balanced finish for such an exotic full bodied style of wine. Very much a food style wine.

Prosecco is traditionally grown in the mountains of the Veneto region of northern Italy. It is a sparkling white wine that is straw in colour, with green hues. Its bouquet is filled with citrus and floral with hints of baked bread. The Prosecco's fresh and clean citrus and apple flavours make it a perfect aperitif.

Noble Red Shiraz displays earthy, black fruit aromas with a hint of pepper. The palate is full bodied with generous fruit structure and nice firm tannins which lead to a lingering finish. This wine has long cellaring potential but can also be enjoyed now.
