The grapes for this Signature Label were grown on the Ellis family vineyard situated on the ancient red Cambrian soils of the Colbinabbin range within the Heathcote wine growing region. This Viognier displays vibrant fruit aromas of apricot and spiciness carrying to a crisp, lingering palate. Forty percent of this wine was partially barrel fermented and matured in French oak barrels for 5 months adding to the aroma and texture of the palate. A wine that can be enjoyed by itself or with mildly spiced foods, it will improve with up to five years cellaring.

Made from 100% estate grown fruit the Chardonnay of 2012 has aromas and flavours of peach, stone fruit and melon. It has a backbone of crisp acid giving good length. A refreshing wine to be served with chicken, fish and pasta meals. Enjoy now!

This Vintage provided excellent growing conditions with good rain late in the season, fewer hot days led to delayed ripening of the fruit, and thus, created a more intense flavour for our Merindoc Viognier.

Long slow ripening allowed for full development of fruit flavours, producing complex wine with elegant almond blossom, stone fruit and citrus aromatics. The palate is generous and textured, following through with more fruit and spice.

Sparking White Wine Blanc de Noir is the French term meaning “white wine from red grapes” and is made entirely from Pinot Noir grapes.

This champagne style wine has floral and citrus flavours, with a long, soft, lingering, creamy texture.

Blanc de Noir is produced by removing the skins from the juice after the grapes have been pressed to prevent the colour of the grape skin colouring the wine.

The yeast lees remains in the bottle for over 18 months to bring a second fermentation as well as flavours and bubbles. The final step, triage is when the yeast is removed from the bottle and flavour adjustments are made.

This wine has a golden hue with green tinges. It displays light matchstick aromas with preserved lemon and slight herb characters. The palate has a rich medium bodied texture with flavours of lemon rind and hazelnuts with a long phenolic finish. Drink now, or cellar for up to five years. Serve slightly chilled.
